Warm Tuna Tartare – on Sea Salt Slate
- 2 x Sweet Sea Salt Slate
- 200 g fresh yellowfin tuna
- 6 x prunes
- 10 g chives
- Olearia San Giorgio Ottobratico Extra Virgin Olive Oil
Preheat the oven to 250 degrees (the same temperature applies for fan ovens). Place the blocks in the oven.
Meanwhile, finely dice the tuna, prunes and chive and mix with a spoon, adding a spoonful of extra virgin olive oil.
Form the tartare (about 1 cm thick), shaping it as you please. We recommend using a circular or square mold, considering the size of the block.
15 minutes after placing the blocks in the oven, take them out and cautiously place the tartare on them. Serve immediately.
At this point the guests can eat the tartare directly or ‘cook it’ longer on the block as they please!
