Spelt

Spelt is one the most ancient and extremely durable types of grain consumed by humans. It offers a broader spectrum of nutrients than common wheat and is a particularly helpful food for people with migraine headaches, atherosclerosis, or diabetes. It is an excellent source of manganese, B-complex vitamins and insoluble fibre. Spelt is similar to wheat in appearance, but it has a tougher husk than wheat, which may help protect the nutrients inside the grain. It contains more protein than wheat and has a slightly nuttier, sweeter flavour, which makes for delicious organic pasta. The San Ri organic pasta line includes Spelt pasta and Refined White Spelt pasta.
