Nero
Nero rice is dark purple in colour, almost black, with a very special taste and aroma of freshly baked bread. Its colour is natural because the pericarp, the outer firm of the rice, is actually an ebony colour. This rice is native to China from the nineteenth century where it was cultivated exclusively for the Emperor and his court. Its name is dedicated to the Goddess of Love because in ancient China it was considered an extreme aphrodisiac.Item: MA16

Aged Carnaroli Gran Riserva
The Riserva Rice collection is special because of where it is grown and harvested – in the plains of Sibari. The characteristics of the climate and the soil are most favourable to this type of cultivation.The land, rich in clay and silt, retains the richness and the careful selection of each seed provides for the maximum varietal purity. The cultivation strictly follows the ancient agricultural techniques and respect for nature. The planting density is reduced to obtain a high quality product. For this particular reserve, the seeds are planted in the centre of the field where there is the least change in temperatur. This helps the rice maintain its nutritional value and flavor. Once harvested, the rice is then treated with an ancient technique called the husking stone. The grains are not worked with metal as this would cause them to heat up so much their actual structure would change. And finally, as if the rice were a fine wine it is aged for one year.
This special care for the rice allows you to completely eliminate the excess moisture in the grains after hulling. The rice starches are completely dry and during baking are gradually released: it is to them that you owe that perfect creamy sauce that is one of the main features of our loved risotto. The end result of this process is a long-grain, full-bodied rice, with a sweet aftertaste that absorbs seasonings well.
Thus, we present a rice that is almost flawless, a true miracle of nature, defined by experts as “the best rice in the world.”

Arborio
Arborio rice has large pearled grains that increase in volume during cooking. It has a high yield and a particular behaviour in cooking. In fact, during preparation, the grains cook perfectly and uniformly yet it retains its firmness in the core, which is rich in starch.
